Mini Pizzas Recipe

This is a simple recipe that I use with left overs for snacks, lunch or even a full dinner meal.  I have yet to meet anyone that hasn't enjoyed it.  The kids usually like to put their own together with their own favorite ingredients.  This is also a great idea for bread that has dried out or gone slightly stale.  Of course, it is yet another recipe that has endless variations to it.

Serves 4 adults


  • 8 Slices of Bread (any type or style of bread)
  • Margarine or Butter spread
  • 1 jar or can of your favorite spaghetti sauce
  • 2 cups of your favorite shredded cheese
  • Toppings


Spread margarine or butter over one side of each slice of bread. The butter is used to keep the spaghetti sauce from soaking all the way through the bread too fast. Add a spoonful of spaghetti sauce over the top and spread.  Now add your favorite toppings and sprinkle some cheese on top.  Place onto a baking sheet and bake at 350 degrees for 3-5 minutes. 

This does not take long to cook at all so watch it closely.  Time to bake actually varies on how many toppings you put on it.  Just watch the cheese that it doesn't burn. If you added a very thick layer of toppings, lower the heat of the oven so it will cook a bit slower.


Another recipe that is great for leftovers, creativity and something fun for the kids to do.

  • Types of bread that you can use is french bread, texas toast, hoagie rolls, hamburger or hotdog buns, rolls, etc.  The list is endless!  Homemade bread is REALLY great!
  • Some of our favorite toppings: pepperoni, olives, leftover taco meat, hamburger, mushrooms (sautee them with a bit of onion and its even better!), breakfast sausage, etc. Let us know what you come up with!
  • To try a Mexican version use a mexican type taco sauce, salsa or picante sauce. Then add taco and/or burrito toppings.  We love it!
