Nancy's Tortellini Soup
24-56 oz. of chicken broth
2 cans of seasoned, diced tomatoes
2 cans of butter beans or great Northern beans (drained)
1 box of frozen chopped spinach
1 bag of frozen cheese tortellini
In a large pot, add the chicken broth, tomatoes, and beans. Drop in the frozen block of spinach. Heat and stir until the spinach has thawed and separated. About ten minutes before serving, add the frozen tortellini. Cook until the tortellini rises.
Prep time: Significantly less than 30 minutes
The kids love it and leftovers are just as good the next day!
